The Recipe

Ingredients

  • 350g almond flour
  • 30g chopped walnuts
  • 120g butter (unsalted, or lightly salted)
  • 2 large eggs
  • 70g powdered sweetener (preferably erythritol)
  • 90g dark chocolate chips
  • ½ teaspoon of salt
  • ½ teaspoon of baking soda
  • 1 tablespoon vanilla extract (or, to taste)

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the almond flour, baking soda, salt and sweetener together in a large mixing bowl.
  3. Melt the butter into a separate bowl, mixing with the vanilla, chocolate chips, walnuts and eggs. Mix these ingredients thoroughly.
  4. Slowly pour the wet ingredients into the dry, mixing until consistent throughout and it has formed a single dough.
  5. Taking a tablespoon of dough, roll it into a ball before flattening onto a cookie sheet.
  6. With the oven now preheated, place the cookie tray and bake for 8-10 minutes. Any more than this will dry the cookies out and result in a waxy texture, so be cautious with your timing!
  7. Allow the cookies to cool for 10 minutes then enjoy!
